candy #3

Butterscotch Caramels

3 cups brown sugar
1/4 lb butter
1 teaspoon lemon juice or vanilla
1/2 cup water

combine ingrediants except flavoring in a heavy saucepan. Place over low heat and stir until sugar is dissolved.

Increase heat and stir constantly.

Cook until candy forms a firm ball when dropped into cold water. (246 degrees). add flavoring and pour into flat greased pan. cool slightly and make into 1 inch squares.

dessert #5

Maple Apples

6 tart apples
1 cup maple syrup
1 1/2 cups water

Wash, pare, and core apples. Leave whole. Combine water and syrup and bring to a boil. Add apples and simmer until tender. Turn frequentlyu to insure even cooking. When apples are done, remove from pan and continue to cook syrup until thickened. Pour syrup over apples. Serve warm or cold with cream or ice cream.

Soup #7

Cheesy Broccoli soup

1/4 cup chopped onion
1 tbsp butter
1 1/2 cup milk
3/4 pound velveeta cheese cubed
1 (10 ounces) frozen broccoli
dash of pepper

In a 2 quart sauce pan, saute onion in butter until tender. Add remaining ingrediets, stir over low heat until cheese spread is melted and mixture is hot. Top each searving with toasted almonds, if desired. Makes almost 5 servings.

Soup #6

Chili - one of many I will probably post

1 lb hamburger
1/2 c brown sugar
2 tbsp yellow mustard
1 med onion chopped
2 14-oz cans of kidney beans
1 pint of tomato juice
1/2 ts salt
1/4 tsp pepper
2 tsp chili pepper

brown first four ingredients together. add everything else and simmer for 1 hour.

salad #1

Spinach Salad

1 lb fresh salad
1/4 lb fresh raw mushrooms
1/4 cup sallions, sliced thin
1 green pepper chopped
2 hard cooked eggs diced
6-8 strips of bacon fried and crumbled

tear washed and drained spinach in bite sized pieces.

toss gently with remaining ingredients

Dressing

2 tbsp hot bacon drippings
1/2 cup salad oil
2 tbsp cider vinegar
2 tbsp honey

mix all ingredients together well. pour over salad and serve immediatley.

serves 7-8

Pie #3

Shoo Fly Pie

Crumbs:

1 cup flour
1 tbsp shortening
2/3 cup light brown sugar

cut together with 2 knives till crumbly. Take out 1/2 cup crumbs and set aside.

Bottom Part:

1 egg slightly beaton
1 cup molasses
1 cup boiling water
1 tsp baking soda
1 9 "unbaked pie shell

to crumb mixture add egg and molasses. add 3/4 cup boiling water and molasses. dissolve soda in remaining 1/4 cup water and mix.

Pour into unbaked pie shell. sprinkle reserved crumbs on top. bake at 425 degrees for 15 minutes. reduce heat to 350 degrees and bake 40 to 45 minutes longer.

Desert #4

Apple Desert

3 granny smith apples or yellow delicious cutup
8 oz cutup
3 candy bars (snickers cutup)
16 oz crushed pineapple (drained)
nuts chopped

Mix all together. Let set for awhile in the refrigerator. Enjoy.
