Casserole #12

Hay Stack Supper

Very popular with the Amish in Holmes County. Here are the components to the dish. You decide how much or little you will add to your dish. You even put your own flavor of foods in your area onto the dish.

Crushed crackers.
Lettuce
Cooked rice
Corn Chips ( I prefer Doritos)
Taco meat or just cooked hamburger
Melted cheese
Peppers/hot pepper/banana peppers
Tomatoes(chopped up)
Sour cream
Salad dressing

Layer the ingredients as seen on the list. Nice thing about a haystack is that you pick how much and what you want on the dish. These ingredients complement each other very well.

Bread #7

Fried Corn Meal Mush 3 cups yellow corn 2 quarts boiling water 1 teaspoon salt 1/2 cup white flour Bring water to a boil. Mix together corn meal, white flour, and salt. Slowly add dry ingredients to boiling water, stirring constantly to remove lumps. When well blended, cover and cook slowly for 1 hour. Put into flat pans to mold. Set in refrigerator to cool throughly. Cut into slices 1/4 inch thick anf fry on griddle until golden brown on both sides. Delicious with maple syrup or apple butter.

Dessert #26

Apple Pie Biscuit

Apple pie filling
Store bought biscuit dough

Pop open can of biscuit. Press down on biscuit to hold apple filling and put on backing pan. Put apple filling in.

Heat oven to 350 degrees and cook for about 20 minutes. Enjoy with your favorite pie stuff.

Casserole #11

Baked Carrots and Apples

4 cups carrots, cut in 1/2 inch pieces
3 cups apples, peeled, cored, and sliced
1/4 cup honey
2 tablespoons butter or margarine
paperika

Steam carrots until tender. Drain, Stir in apples and honey.

Turn into buttered casserole dish. Dot with butter. Cover and Bake at 350 degrees for 50 minutes.

Stir. Sprinkle with paperika. Bake uncovered, and additional 10 minutes.

Pie #6

Amish Sugar Pie

1 cup sugar
3 tablspoons flour
12 oz can evaporated milk
3 tablespoons butter
1/8 teaspoon salt
1 teaspoon cinnamon

In a pie shell place sugar, flour, and salt. Mix with hands.

Just pour evaporated milk over mixture, but do not mix.

Dot with butter and cinnamon.

Heat oven to 350 degrees and bake 50 minutes.

Breakfast #1

Baked Oatmeal

1/4 cup cooking oil
1/2 cup sugar
1 egg
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cup quick oats
1 cup milk

Beat together all ingredients with mixing spoon; pour into greased 9x13 pan.

Bake at 275 degrees for 30 minutes or until done. Serve with milk.

Salad #4

YUM-YUM Salad

1 can (13 0z) evapotated Milk
1 can (20 oz) crushed pineapple
1/2 cup sugar
1 package 3oz gelatin any flavor
1 package 8 oz cream cheese

Chill milk. Boil pinapple and juice with sugar slowly for 5 minutes add gelatin and stir until dissolved. Cool. Beat cream cheese with chilled milk until fluffy. Fold in pinapple and gelatin mixture. Pour into mold and chill until firm.
