PIE #6

Strawberry-Rhubarb Pie

1.5 cups chopped rhubarb
1/2 cup rhubarb
1/2 cup honey
1/2 cup sugar
3 oz if strawberry flavor gelatin
1 cup of strawberries
1 overflowing cup of ice cream(vanilla or strawberry)
Pie shell for 9 inch pie

Cook rhubarb in water until tender.  Sweeten with the honey and sugar.  Cool.  You can puree or leave it chunky.

Prepare gelatin and chill till but not set. Mix in strawberries and and gelatin mixture and ice cream.  Mix thoroughly. Placed in shell and refrigerate until firm.

Soup #10


Chicken Corn Rivel Soup

3-4 pounds of chicken
2 tbsp salt
1/4 tsp pepper
1 1/2 cup celery chopped
1 medium onion chopped
2 tbsp minced parsely
1 quart corn
rivels

In a large kettle cover chicken with water add salt and pepper.  Cook until soft and remove bones if there are any.  Cut meat into small pieces.  Heat broth to boiling point and add remaining ingredients  Cook 15 minutes and add meat.  Heat through.

Rivels

1 cup flour
1 egg
1/4 cup milk

Combine flour and egg.  Add the milk.  Mix rivels with two forks and form to the size cherry stones or smaller.  Drop rivels into boiling some boiling broth.  Stirring to prevent rivels from sticking together.

Meat #14

Meat Balls with Mushroom Soup















2.5 pounds of hamburger
1/2  cup chopped onion
1.5 cup cracker crumbs
3 eggs
2 cans mushroom soup and enough milk to make into a gravy
2.5 tsp salt
1/2 teaspoon pepper
1/2 cup catsup
1/2 cup cream
2 cups any vegetable that you prefer ( we went for brussel sprouts)

Mix all ingredients excepts vegetable and mushroom soup, and shape into small balls..  Brown meatballs and put into casserole dish.  Add mushrooms soup to drippings in skillet.  Add enough milk to make a gravy.  Stir until heated.   Gravy thickens as it cooks.  Add vegetable.  Pour soup over meatballs and vegetable.  Cover and bake at 325 degrees fpr 1 hour and 15 minutes.

salad #8



Tangy Pasta Salad

16 oz of noodles {smaller but a bitt wider noodles is what we use.  Spirals would work great too}
8 oz of bacon
3 sliced carrots (or bag of slivered carrots)
1 finely chopped green pepper {I used about half}
1 finely chopped onion {I used about a 1/4}
1 1/4 cup miracle whip
1/2 tsp garlic salt or ground garlic
1/3 cup sugar
cheese to top salad.

Cook noodles and place in a large bowl.

Cook bacon.  Let cool and crumble. 

Add carrots, green pepper, onion, and bacon  to pasta.  Stir everything together.

In a seperat bowl mix together the mircle whip, garlic and white sugar. Then mix this into the pasta.

You then can top the sald with cheese or eat it straight.

You can eat it right away, but it tastes better if it is cool.  I also thought this recipe would taste great with shrimp or maybe crawfish or even lobster.

Sloppy Joes

1/2 lb butter
2.5 lb hamburger
1.5 cup catsup
1/2 cup brown sugar
3/4 cup flour
1 onion chopped
1/8 cup mustard

Brown hamburger and onion.  Put in the rest of the ingredients and simmer for 15 minutes.

Cookie #5

 
 
Chocolate Chip Cookie
 
1 cup shortening or butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 1/2 cups white flour
1 teaspoon soda
1 teaspoon salt
1/4 cup hot water
1 teaspoon vanilla
1 package 6 oz chocolate chips
 
Throughly cream the shortening(butter) and the sugars.  Add eggs and beat well.  Mix together flour, soda, and salt.  Add to first mixture.  Add water and vanilla and mix throughly.  Stir in chocolate chips.  Drop by spoon onto a slightly greased baking sheet.  Bake at 375 degrees for 10-12 minutes.  The cookies should be slightly brown.

Cake #3

Apple Cake

Combine:

3 eggs beaten
1 cup oil
2 cups white sugar
2 cups flour
2 teaspoons cinnamon
1/2 teaspoon soda
4 cups apples chopped
1 teaspoon salt
1 teaspoon vanilla


Crumbs:

1 tablespoon butter
1 cup brown sugar
2 teaspoon flour
cinnamon

mix  together on the stove and sprinkle on top.  Bake at 350 degrees for 40 minutes.

salad #7

Cottage Cheese Orange Jello

1     12 oz container cottage cheese
1     3 oz orange jello dry

Mix well and chill for 1 hour.

add:

1 small can pineapple tidbits drained
1 small can mandarin oranges drained

then mix in

1   10 oz cool whip

Chill and serve.

Casserole #17

YAMISETTA

1 lb. noodles, cooked in salt water 3 lb. hamburger & 1 onion, fried together Salt & pepper 2 cans mushroom soup 1 can celery soup 1 pt. peas 1 c. sour cream...

Mix the soups and cream together; pour over noodles and hamburger in a large roaster and mix in peas. Bake for 1 hour at 350 degrees.

Meat #12

Pork Chops, Breaded

6 pork chops
3/4 cup bread crumbs, fine
1 tsp salt
1/8 tsp pepper
1 egg beaten
1/4 cup milk
1/4 cup boiling water

add salt and pepper to bread crumbs. 
beat egg and add milk.
dip pork chops in liquid and roll in bread crumbs.
put 3 tablespoons of fat into frying pan and brown pork chops.
place chops in baking dish and add boiling water.
cover and bake at 400  degrees for 50 minutes.

Drink #12

Red Beet Wine

1 Gallon Red Red Beet Juice(Get this from boiling Beets)
1 Gallon water
6 lbs sugar
1 pkg yeast
1 slice of bread

Stir red beet juice, water, and sugar very well. Let stand until it stops moving. Lay bread on top of mixture in sometype of crock.  Spread yeast on top of bread; cover with a cloth.  Stir on 6th and 7th day.  Strain and bottle on 10th day.

Iced Coffee

Make coffee double strength(vary with taste) and pour hot coffee over plenty of ice in tall glasses.

As the ice melts, it will dilute the coffee.

Top the glass with ice cream.

meat #11

Porcupine Ball

1 lb hamburger
4 slices of bread
1 egg
1 cup milk
2 medium onions, diced
2 sticks celery, chopped
1/4 cup uncooked rice
1 teaspoon salt
2 cups tomato juice

Crumble bread and soak in milk.

Stir in egg.

Mix with other ingredients, except tomato juice.  Shape into balls and place in a casserole dish.

Pour tomato juice over balls and bake 1.5 hours at 350 degrees.   Can be cooked in a pressure cooker for 15 minutes.

Bread #8

Zucchini Bread

3 eggs
1 cup oil
1 cup honey
3 teaspoons vanilla
2 cups grated zucchini
2 cups wheat flour
1 teaspoon baking soda
3 teaspoons cinnamon
1/4 teaspoon baking powder
2/3 cup chopped nuts

Mix eggs, oil, honey, vanilla, and grated zucchini.  Mix lightly but well.  Add dry ingredients.  Mix until well blended, then add nuts.  Pour into 2 greased bread pans.  Bake at 350 degrees for 1 hour.

Salad #6

Broccoli Salad

2 bunches of broccoli
bacon bits
1 medium onion chopped
1 cup sharp cheddar cheese shredded

Dressing:
1 cup mayonnaise
1/2 cup sugar
2 tablespoons vinegar or oil

Cut up broccoli and mix in bacon bits. Mix dressing and pour over broccoli, onion, and cheese.  Cover and refrigerate.

Casserole #16

Amish Noodles (intnded for 100 people

2 lbs butter
4 cans of cream of chicken soup
2 lbs velveeta cheese
1 cup chicken base
some deboned chicken (optional)
2-3 Tablespoons salt to taste
1 teaspn pepper
5 large cans of chicken broth
5 (1 lb) package of noodles crushed.

Brown butter in a 20 qt stock pot to add flavor.  Add soup and cheese.  Stir well.  Add chicken base pepper and broth.  Add water to about3/4 full  bring to boil;  Boil for 2-3 minutes.   Let set in warm oven for 2-3 hours.

Chocolate Coffee Cake

3 cups flour
2 cups sugar
1/2 cup cocoa
2 teaspoons soda
1 teaspoon salt

Put above ingrediants into bowl & mix.

3/4 cup oil
2 tablespoon vinegar
2 teaspoon vanilla
1 cup cold water
1 teaspoon instant coffee in
   1 cup hot water.   Add this last

Mix well and put into a greased pan and Bake at 350 degees for 35-40 minutes .  Use a 9x13 pan

Casserole #15

Chicken Tetrazzini

16 oz vermicelli ( a pasta)
1/2 cup chicken broth
4 cups chicken cooked and chopped
1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup
8 oz sour cream
6 oz sliced mushrooms
1/2 cup shredded parmesan cheese
1 tsp pepper
1/2 tsp salt
2 cups shredded cheddar cheese

Prepare vermicelli to package directions; drain.  Return to pot and toss with chicken broth.  Stir together chicken  and next 8 ingredients in a bowl.  Add vermicelli and toss well.  Put in 2 greased 7" x 11" backing dish.  Sprinkle with cheddar cheese and cover.  Bake at 350 degrees for 30 minutes and uncover.  Cook 5 more minutes.

Casserole #14

Chickenetti

1 8oz package of spagetti cooked and drained
4 cups of chopped chicken
1/4 cup pimento
1/4 cup chopped green pepper
2 10oz cans of cream of mushroom
1 cup chicken broth
1/4 teaspoon celery salt
1/4 teaspson pepper
1 onion grated
3/4 lb grated velveeta cheese

Mix together  keeping about 1 cup of cheese for top of dish.  Bake at 350 degrees for 1 hour.  Makes 2 casseroles.
