Drink #8

Vegetable Broth

4 cups chopped celery
3 cups carrots, chopped
2 cups spinach, chopped
1 cup parsley, chopped
2 quarts cold water
1 teaspoon salt

Mix chopped vegetables and add water or salt.
Bring to boiling and remove from heat and let stand 30 minutes.
Strain and chill.
Serve as an appetizer.
